🍰 Ingredients
Wet ingredients:
* 2 cups grated carrot (about 3 medium)
* 3 eggs
* 1/3 cup maple syrup (or honey)
* 1/4 cup olive oil or melted coconut oil
* 1 tsp vanilla extract
Dry ingredients:
* 1 cup almond meal
* 1/2 cup oats
* 1/2 cup pea protein powder (unflavoured preferred)
* 1 tsp baking powder
* 1 tsp baking soda
* 1 ½ tsp cinnamon
* 1/2 tsp nutmeg
* Pinch of salt
Optional add-ins:
* 1/4 cup chopped walnuts or pecans
* 2 tbsp chia seeds or flaxseeds
* 1/4 cup raisins
* Dark chocolate chips

🧁 Method
1. Preheat oven to 180°C and line a slice tray.
2. In a large bowl, whisk together wet ingredients.
3. In a separate bowl, combine all dry ingredients.
4. Fold dry into wet until just combined.
5. Stir through optional extras.
6. Pour into tray and smooth top.
7. Bake for 30–35 minutes or until firm in the centre.
8. Cool completely before slicing.
